Just what is “schnitz und knepp” and “hog maw?” Perhaps scrapple, shoo-fly pie and rivels sound more familiar?
The newest special exhibit, From Field to Feast: Pennsylvania German Food examines the unique culture surrounding 18th- and 19th-century Pennsylvania German food. The exhibit features dozens of artifacts, some purchased by Milton Hershey.
Traditional Pennsylvania German methods of harvesting and animal husbandry are explored, as well as food preparation and preservation. Visitors can also learn about open-hearth cooking, butter-making and Pennsylvania German social gatherings.
Young visitors can “pick” vegetables from the kitchen garden, assemble a grain puzzle, smell fresh herbs and spices and try to identify which foods were eaten by Pennsylvania German people.
Every member of the Pennsylvania German household had a role in keeping the family fed. What might your role have been?
As the saying goes, “Bussie waiirt ows, kocha dut net” or “Kissing wears out, cooking doesn’t!”
